Fried potatoes are an incredibly simple dish. But many people either don’t make them at all, or they’re just far from perfect. Today I’m going to tell you how to make the perfect fried potatoes – crispy, soft inside, and not soaked in oil.
- Peel and wash the potatoes and cut them into bars.
- Rinse them in cold water, put them on paper towels and blot them.
- Heat a non-stick pan (or any pan you are sure nothing will stick) on a large burner on “nine”. Pour oil on half a finger.
- Put potatoes in the heated oil, not too many of them.
- Lightly salt and fry over high heat for about 4 minutes without a lid, turning once in the process. Here it is important not to break the potatoes. Therefore, flip them with a thin spatula, or better yet, toss them in the pan as if you are frying something in a wok.
- Reduce the heat to 7 and continue to fry, turning occasionally gently, until cooked. It’s another 10 minutes.
- Done potatoes on paper towels, to absorb excess fat. Taste and season with salt.
Done! It’s somewhere between a Mac ‘n’ cheese fry and a home fry.
